碎肉豆腐 Tofu with Minced Pork

  • 說明 Explanation
    1. This dish goes well with plain rice and is greatly popular in our family.
    2. As a general rule, fat makes the food taste better. Therefore, the greasier the pork, the more tasty the dish will likely be. However, for the sake of health, leaner pork is recommended. The procedure to prepare the minced pork is standard and is applicable for many other dishes that call for minced pork.
    3. This dish keeps its color and flavor quite well and can be served reheated. If you have several dishes to prepare for a meal, this can be the first to do (and kept warm).

  • 材料 Ingredients
    1. Minced Pork 200g (about 1/2 lb)
    2. Tofu 1 square piece (block)
    3. Cooking Wine 2 TBS
    4. Soy sauce 2TBS for marinating pork and another 1TBS for cooking tofu
    5. (Light soy preferred. ).
    6. Granulated sugar 2 tsp
    7. Corn starch 1 TBS
    8. Sesame oil 2 tsp
    9. Cooking oil 1 TSB
    10. Green Onion 1 or 2 stalk

  • 做法Procedure:
    1. In a large bowl, put minced pork. Add cooking wine, soy sauce, sugar, starch and sesame oil. Mix well and let marinate for 20 ~30 minutes.
    2. Cut Tofu into chunks. Size and shape do not matter. The idea is to allow the flavor to go into tofu which is bland in itself. Chop up the green onion into about 0.3~0.5 cm (about 1/5 to 1/4 of an inch).
    3. Heat a frying pan (or wok) to medium heat. Add cooking oil. Swirl the pan so that the oil covers the entire cooking surface. Before the oil gets hot, add the marinated pork and cook till just done. Put the cooked pork aside. Save the “juice” for the next step.
    4. In the same frying pan, put the “juice” and the cut up tofu, and 1 TBS soy sauce. Cover and cook in medium heat for a few minutes or when the “juice” boils and tofu is heated thoroughly.
    5. Add (3) (the cooked pork). Stir gently (don't mesh!) so that the tofu and the pork are mixed well. Tofu, being soft and tender, will certainly break a little and it is alright. Before serving, add the cut up green onion. A few drops of additional sesame oil optional.
    6. As this dish contains some liquid, a deeper dish is needed
