Oatmeal Cookies (The "Everything" Cookie, or THE Cookie)

  • Ingredients:



    • 1 1/2 cups of flour(either whole wheat or all purpose is fine.  I sometimes add 1/2 cup of wheat germ or bran in addition)
    • 1 tsp salt
    • 1 tsp baking soda
    • 1 cup oil
    • 1 cup sugar (whatever color.  I tried two TBS of molasses and 2/3 cup of sugar.  The amount of sugar used is variable with personal taste.)
    • 3 eggs
    • 1 tsp vanilla extract and/or 1 tsp cinnamon, nutmeg to taste (This part is optional, really depends on one's personal taste)
    • 1 cup walnut/peacon/sunflower seed
    • 1 cup chocolate chip
    • 3 cups of rolled oats
    • 1 cup raisins
  • Procedure:



    • Mix well all dry ingredients in a large bowl. 
    • In a separate large bowl, cream oil & sugar first, then beat in eggs and vanilla until light & fluffy.
    • Stir together everything.  Mix well until a consistent texture is achieved.  (We find adding dry ingredients into the wet bowl works better)
    • Drop batter by teaspoon onto ungreased baking sheets. (Using a mold is more work, but results in more uniform size.) 
    • Bake at 350 (F) for 10-12 minutes.
    • Remove from oven, let cool on rack.
