一、 材料:
- 1 cup raisins (可以水或蘭姆酒浸軟)
- 1 cup chopped walnuts (or pecan)
- 2 cups all-purpose flour
- 1 tablespoon (大匙) baking powder ( 或baking powder and soda 2tsp each)
- 1 teaspoon (小匙) each: baking soda, salt, ground cinnamon (can add 2 tsp vanilla)
- 4 eggs
- 1 cup vegetable oil
- 3/4 cup brown sugar
- 3 cups shredded carrots
二、 做法:
- 將葡萄乾浸於蘭姆酒中到軟。
- 預熱烤箱到 350 degrees F (175 degrees C). 將容器抺油 或用特用紙(柸)。
- In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon (dry, power ingredients). In a separate bowl, combine eggs, oil and brown sugar (all wet stuff); beat well. Combine egg mixture and flour mixture; mix just until moistened. Fold in carrots, pecan and rum soaked raisins. Spoon into prepared muffin cups or a 9X9 in. cake pan.
- Bake in preheated oven for 20 to 30 minutes. Let cool.
