- Ingredients:
- 2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup oil
- 2 cup sugar
- 4 eggs
- 3~4 cups grated carrots
- Procedure:
- Mix well all dry ingredients in a large bowl.
- Blend oil and sugar in a separate bowl. Add eggs, one at a time. Beat well.
- Add "dry" mixture slowly into the“wet”mixture. Mix in grated carrot. Pour into a greased cake pan.
- Preheat oven to 350 F. Bake for about 1 hour or to desired doneness.
